Ladies and gentlemen allow me to introduce you to my new obsession: grapefruit smoothie bowls.
So I’m a morning person, but a slow one at that. This means from the time up at about 6 to when I’m out the door at 8, I manage to do very few things – and one of those often isn’t eating breakfast. However I’m trying to break away from doing the whole eating breakfast at my desk thing, so lately I’ve been trying either a breakfast prepared ahead (hello overnight oats) or a breakfast that is SIMPLE. These grapefruit smoothie bowls are the star of that show and are really changing my mornings. On the days I’m stretching out the mornings, I’ll eat a smoothie bowl while I get ready and listen to podcasts. On the days I have to get out of the door quickly, I take my smoothie to go. Either way, its delicious.
What you’ll need:
- 1 large grapefruit
- 1 banana
- 1 tbsp honey
- Optional Toppings: I used shredded coconut and pumpkin seeds. Chia seeds, cacao nibs, pomegranate seeds, nuts, etc would work great as well
The how-to:
step one: Cut your grapefruit in half, gently cut out the pulp and scoop out. Keep the grapefruit “bowls” if you plan to eat in them
step two: In a blender, add the cut grapefruit pulp, one banana and honey. Feel free to add more honey to suit your taste. Somehow the grapefruits I buy aren’t *very* sour/acidic so I find that 1 tbsp of honey is perfect.
step three: Pour the smoothie into the grapefruit bowls (or any other bowl/to go cup) and garnish with toppings
Tip: Although I didn’t do this in the recipe, I usually toast my pumpkin seeds with a bit of honey and cloves, and it adds even more oomph to the recipe (you can make ahead and store).
