I’m embarrassed that it’s taken me so long to get familiar with cardamom but now that I am, it’s going in EVERYTHING – including these popsicles. I don’t know if its just me, but popsicles often feel childish to me, so I like to create flavor palettes that are a bit more “mature”. These ones have cardamom and Madagascar vanilla bean and let me tell you; the combination is amaaaazingggg!.
This recipe only calls for 4 ingredients and it’s a very simple one. I see a lot more of these in my future.
what you need:
- 5 cardamom pods
- 1/2 cup sugar
- 1 tsp Madagascar vanilla bean paste (I got mine from Trader Joe’s)
- 1 can coconut milk
makes 6 popsicles
the how-to:
step one: Crack open the cardamom pods and collect the seeds (that’s where all the flavor is!)
step two: Add the sugar and cardamom in a bowl and use a wooden spoon to crush it into a fluffy powder.
step three: Add in the coconut milk with the powder, add the vanilla bean paste then mix well.
step four: Pour the mixture into possible molds and freeze for a few hours.
Bonus bougie: Garnish your popsicles with edible gold leaf!
I had eaten half of these popsicles before I even began writing this post and I’m not ashamed to say it. They taste so good, and you’re about to be making these all summer. #thankmelater
