Guys. This dessert is what the cool kids call LIT. I don’t remember the last time that I liked something so much that I had four – yes I said FOUR – helpings in one sitting. I was so full that I couldn’t move, but my heart was content! Stone fruit has always been at the top of my favorites list, and now that I know what happens when you grill them I don’t think there’s any turning back.
Topped with a generous scoop of artisan Tahitian vanilla ice cream, these peaches are tender from grilling and packed with flavor. You’re going to be SO into them.
what you need:
- 1 tbsp melted butter
- 1 tbsp brown sugar
- 1/2 cup bourbon
- dash of nutmeg
- 3 large peaches, halved and pitted
the how-to:
step one: Whisk together the butter, brown sugar, bourbon and nutmeg in a large bowl. Make sure everything is mixed really well.
step two: Place the peaches in the mixture and toss them around so they are all covered with it. Place in fridge for 1 hour to absorb all the flavors
step three: Grill peaches cut side down first and turn over after about 2 minutes. Keep brushing on some of the butter-bourbon mixture as you grill to get the optimum flavor.
step four: Allow peaches to cool, then serve with ice cream and garnish with mint.
This dessert reminds me of a deconstructed preach cobbler – maybe I’ll do a deconstructed pie recipe for Thanksgiving! You can definitely eat these peaches alone, but it’s the ice cream that makes it real comfort food. And you can use your favorite ice cream flavor, not just vanilla!
